Why beverage production needs more than standard MRP

At its core, beverage production is a liquid process with a tax obligation wrapped around it. Standard MRP assumes discrete quantities moving from one operation to the next, but a brewery or distillery keeps work in progress sitting in tanks for weeks, loses volume to evaporation and transfer along the way, and still has to declare volumes and alcohol content to a revenue authority. On top of all that, a large share of the packaging leaves the site as an asset you expect to see again. Kegs, casks and pallets are not consumables, and treating them as such in your ERP will quietly erode a meaningful part of the balance sheet.

Is your excise reporting rebuilt from scratch each period?

Production, transfers, losses and duty-paid removals live scattered across brewing logs, packaging records and the accounting system. Every reporting period, someone sits down and rebuilds the numbers in a spreadsheet, and if the revenue authority ever asks a question, the calculation has to be reconstructed months after the fact.

The movements that drive excise become real transactions in Odoo: production volume recorded by batch, transfers between bonded and duty-paid locations, and losses or removals logged for sale, export or samples. Every one of them carries volume and alcohol strength, which means the period figures come from a report over transactions rather than from a spreadsheet. Odoo will not file the return itself, but it produces the auditable working papers that support it.

Do you know your real yield from mash to package?

Batch yield gets estimated from tank dips and finished case counts, and losses to trub, racking, filtration, evaporation and line waste all get lumped into one figure. As a result, a recipe that persistently underperforms, or a transfer line that leaks, can hide inside normal variance for months.

With each tank set up as a stock location and each transfer as a tracked move, volume gets measured at every stage instead of just at the two ends. Odoo MRP tracks planned against actual consumption per batch, quality control points capture gravity, ABV and temperature at the stages that matter, and yield variance is reported by recipe, by vessel and by operator. That means a losing step shows up while there is still time to fix it.

How many of your kegs are actually coming back?

Kegs leave with deliveries and come back on their own schedule, whenever that happens to be. Deposits get charged inconsistently, nobody can point to the customer sitting on forty kegs against a fifteen-keg average, and the annual keg purchase gets booked as a cost of doing business instead of what it actually is, a recoverable asset leak.

Kegs and casks become serialised returnable assets in Odoo, issued on delivery and expected back on a return move, while Odoo Rental or a deposit product handles the financial side. Barcode scanning at dispatch and return keeps per-customer balances current, ageing reports show exactly who is holding what and for how long, and deposits invoice and credit automatically rather than getting negotiated after the fact.

    Does Odoo calculate and file excise duty?

    Odoo holds the underlying data and can compute duty amounts through configured taxes and reports, though there is no certified connector to TTB, CRA or the provincial liquor boards, and no native excise return form. Filing stays manual, or runs through a specialist tool. What you gain instead is that every number on the return traces back to a transaction rather than to a spreadsheet.

    Can Odoo manage tanks and cellar operations?

    Yes: model each vessel as a stock location with a defined capacity, and occupancy, contents and transfers become visible in real time, with quality readings recorded at every stage. Odoo will not read your tank sensors by itself, live level, temperature and gravity have to come in from your control system or from manual readings, but once they do, Odoo becomes the record and planning layer on top.

    How does Odoo handle distributor and three-tier sales?

    Price lists, customer categories and separate sales channels let distributor, on-premise and direct sales run side by side, with lot traceability preserved along each route. What is not modelled natively is state-by-state licensing rules, brand registrations and franchise law obligations; those get handled through validated data and process controls that we configure together with you.

    How long does a beverage Odoo implementation take?

    Somewhere around 12 to 18 weeks. A single-site brewery with a taproom and a handful of SKUs can be live in about 12 weeks. Bring in a distillery with bonded stock, keg fleet tracking, multi-channel distribution and excise reporting, and 18 weeks is the more realistic plan, with excise design agreed early since it shapes the whole location structure.
